In Italy, the acknowledgement of craft beers together with the exponential increase in the number of microbreweries, shows a sector with huge potential for growth. In this context, it may become necessary to identify new markers that can contribute in valorizing and protecting artisanal products, both in terms of superior quality, and to provide the consumer with the basics, in order to be able to identify a product on the market, which actually complies with artisan legislation. The HS-SPME/GC-MS procedure of the aromatic samples of beers, coupled with multivariate statistical analysis, provides useful information for the characterization and classification of samples belonging to the two types of beer samples analyzed (industrial vs. craft products). Aroma has a great influence on the acceptability of a product by consumers and therefore can be considered as a discerning factor in the evaluation of the quality of the product on the market. The good results obtained from this, highlights the fact that targeted analysis of flavour markers, could be used to assess the authenticity of products obtained by using artisanal methods.
