3 - The quantification of oxygen in a bottle of wine. Evaluation of the effect and shelf-life

The dramatic increase in exportation of wine may cause problems which are linked to the level of oxygen present at the moment of bottling, as well as sealing, and during the operations carried out in the cellar. The colorimetry technique, developed by the University of Bordeaux, has allowed the presence of oxygen to be quantified at the moment of bottling and a clear understanding of the kinetic entry under normal operating conditions. This new knowledge allows the wine cellar staff to objectively evaluate possible modifications to the product over time, also depending on environmental conditions.
