5 - Aromatic profile of white wines from minor varieties of Sardinia

This work is part of a project concerning the recovery of minor varieties of Sardinian grapes. Around 150 varieties were examined for their genetic, ampelographic and chemical-sensorial characterization. The chemical data, the results of the aromatic and sensory characterization of 10 wines produced with the same number of minor grape’s varieties are reported here. The sensory data PCA showed the most important olfactory similarities among these wines.
