In this study, the sensory analysis and instrumental analysis of “caciottina di bufala” samples produced in lower Lazio at different degrees of maturation are carried out. The aim of this experiment is to evaluate the influence of the ripening time on the nutritional and sensory properties of the cheese. The color of the cheese is the most stable character while the appearance, aroma, texture, taste and total sensory evaluation vary during the three aging periods analyzed. The bidirectional analysis of variance demonstrated a significant effect of curing times on both the chemical and physical characteristics and on all sensory characteristics.

The sector of ham products has taken on a fundamental role in the Italian economy, so attention to the problems of this sector is essential, because of its crucial importance in the economic system of the country as well as at international level. The products of this sector can be attacked by parasites, arthropods, which cause direct and indirect damages. This is the case of Phiophila casei, a parasite of cheese and meat, which is currently responsible for a critical hygiene situation in ham factories. The trophic activity of the larvae and adults on the products causes serious problems, as they are easy vectors for various bacteria, including Clostridium botulinum. Another danger is ingestion of the larvae, which resist the action of gastric juices and therefore digestive enzymes, causing miasis and pseudomiasis in the intestine. It is not possible to use any type of insecticide in the maturing rooms, so biological control is essential.
