5 - Digital transformation and industry 4.0: empirical analysis on the evolution of companies in the large-scale retail trade
C. Amendola - M. Savastano

The rapid acceleration of technological development in recent years has profoundly revolutionized the way companies are managed, pushing them to propose new business models, products and marketing strategies. At the same time, the role of the consumer has undergone a radical evolution, becoming a central figure for the company, which needs effective two-way communication that improves interaction with customers and meets their growing expectations. The current scenario is therefore shaped by digital transformation, a term used to indicate a set of technological, cultural, organizational and social changes that involve all companies and market sectors. In order to better understand the impact that this process, through the complex paradigm of Industry 4.0, has on Italian firms, a survey was conducted that involves companies operating in the large-scale retail trade (GDO) sector. This industrial sector was chosen as it is a context increasingly characterized by automation and digitalization of sales processes. Based on the results obtained through an online survey on a sample of 130 companies, this paper proposes some significant considerations on the diffusion of digital technologies, on the benefits they bring as well as on the managerial and organizational impacts generated in the business context under consideration.

22 - Computer vision for the development of smart drying processes
A. Bandiera - G. Bedini - S.S.N. Chakravartula - R. Massantini - R. Moscetti

Drying is a widely used process in the food industry. Its empirical execution can be responsible for high energy consumption and low-quality food. The aim of the study was to implement in-line sensors (camera and load cells) in a cabinet dryer to monitor colour and moisture changes in carrot slices (5-mm thick). Drying was carried out for 36 hours at 35°C, 35% R.H. and an air flow of 2.98 ms-1. In-line acquisitions were performed every 5 min. The system successfully monitored changes in [i] luminance and hue angle, [ii] size and [iii] weight in the product. The linear relationship between size and weight was used to develop a PLS model to predict moisture content in the product. The model was characterised by performance metrics (RMSE 0.174; BIAS -0.170; Adj-R2 0.99) which were comparable to the most common thin layer models (Netwon-Lewis; Page; Handerson & Pabis; Logarithmic). The research lays the foundation for the development of dryers equipped with artificial intelligence to monitor and control the process through computer vision.
